Climate Models Overheat Antarctica: Sometimes being wrong is good news. A new report from the National Center for Atmospheric Research (NCAR) suggests concern about warming in Antarctica may be overstated. NCAR scientist Andrew Monaghan says that while warming is clearly happening elsewhere, the best climate models consistently show greater heating than has been historically observed. Why the divergence? It seems that the models assume more water vapor in the Antarctic atmosphere than is actually present. (Newswise)

Cooking at home is a great way to ensure a healthy meal; so we asked nutritionist Julie Lerner Grayson for the dish on the best preparation methods.

Steaming veggies retains flavor, color and nutrients. Boil 2 inches of water in a pot, put veggies in a steaming basket and cover. Once cooked, splash with cool water to stop the cooking process.

Blanching, or quick boiling, breaks down vegetables’ fiber, which helps digestion. Boil water, add a pinch of salt, drop in vegetables and lower heat, cooking until bright. Rinse in cool water.

Stir-Frying uses a little healthy fat to cook foods quickly (canola oil works well). Brush the wok or pan with oil, heat, add food and stir constantly.

Sautéing requires oil that doesn’t burn easily (try grapeseed, canola, avocado or coconut). Try sautéing in broth to reduce calories. Add food to a very hot pan (food should be totally dry), shaking occasionally to ensure even cooking.

Poaching fish is easy and low-cal. Bring a broth to a simmer and add your fillet (fish should be fully submerged); cover and cook for about 5 minutes.

Just how green is the Internet? Going virtual has the potential to save significant amounts of energy, with a recent study predicting that Internet services could reduce carbon emissions by staggering 1 billion tons.

But look beyond the green hype, and the web has a dark secret - at the other end of your Internet cable, humming away, and hidden from sight, are thousands of energy hungry datacenters, running 24/7 and estimated to be using energy equivalent to all of the color televisions in the US. Worldwide datacenter energy usage has doubled since 2001 and is set to double again by 2011.

Google is today’s biggest datacenter operator, having more than twice the server capacity of any other firm in the world, but this could be set to change. The proposed merger of Microsoft and Yahoo would create a rival Internet giant with similarly huge capacity, creating new competition at many different levels.

There is a new zero-emissions vehicle that runs on compressed air called the Air Car. It's made by a French company called MDI and was invested by the CEO and founder of MDI, Guy Negre. It will be introduced in France and India in late 2008. The company plans to offer different models over time, including 2, 4 and 6 cylinder engines at prices ranging from $4,800 to $12,900. The first model, OneCAT holds up to 5 passengers and can go up to 500 miles on the highway with just one fill-up and up to 68 miles per hour. With a 5 passenger capacity this is truly a family friendly vehicle! To fill the engine, you just plug the car in at home and a built-in compressor refills the tank in 4 hours. I know where my next car is coming from!

1. Snack

To lose weight in a healthy way, you have to eat less. So does that mean no more between meal snacks? Actually, you should be enjoying healthy snacks between meals to keep your metabolism going, keep your hunger at bay, and to maintain a healthy blood sugar level. Choose snacks that are a mix of protein and carbohydrates, and aren’t high in sugar. Use portion control. It can be easy to over eat if you aren’t paying close attention to portions. You can practice better portion control by buying single serving packages or creating your own portions and storing them in plastic containers or plastic bags in the cupboard or refrigerator. Don’t be fooled by a label that reads “reduced fat” and assume you can eat all you want! Reduced fat doesn’t translate into less calories, so read labels carefully. You’ll have an easier time moderating if you don’t eat directly from the package or box. By preparing portions in advance, you’ll have healthy choices ready at snack time, and you’ll be less likely to over eat.

2. Go With the Grain

You reap wonderful health benefit when you include grains, vegetables, and fruits into your weight loss plan. They provide nutrients that can help reduce disease, and they are high in fiber and low in calories. Fiber helps you to feel full for longer periods of time and can help with your portion control.

3. Eat When You’re Hungry

Sometimes we eat when we’re bored or anxious, or for reasons other than hunger. Are you listening to your body? Are you eating when you’re hungry, or is it to comfort yourself?

Ice Cream Often Contains GMO Fish Genes!

I just read an alarming blurb in VegNews (June 2007, Page 20) that Unilver, the largest supplier of frozen desserts to the US (and parent company to Ben & Jerry's, Breyer's, Klondike, and Popsicle brands), has started using "ice structuring antifreeze" proteins from genetically modified FISH in some of their products. They synthesize the GMO compound from yeast that comes from the blood of ocean pout to prevent "the crystallization of ice cream when it melts and is refrozen." In April 2006, two professors from the British Institute of Science in Society (ISIS), Prof. Joe Cummins, Dr. Mae-Wan Ho and Prof. Malcolm Hooper, wrote a report they submitted to the UK Food Standards Agency, opposing Unilever's application to use these GMO fish genes in their food products. Apparently, there are health risks associated with ingestion of these products, including allergic reactions and inflammation. The scientists strongly recommended extensive testing before allowing these modified fish genes into the food chain. In April 2007, these same authors submitted another article and reported that the UK Independent Science Panel had recommended not allowing the introduction of food products containing these modified fish genes into the UK until long-term studies are conducted.
