Wheat Allergies

I became interested in the controversy surrounding wheat when my chiropractic doctor suggested I give it up (along with sugar and dairy) to reduce inflammation and help to cure my shoulder which had been chronically sore for several months.

I was of course aware of the trend in the American diet away from carbs but had always felt a bit of derision for this fad since I associated it with the Atkins diet, with its heavy emphasis on animal protein and fat. I had read a number of articles on the problems with the Atkins Diet and felt that it encouraged American’s love affair with meat, eggs and dairy products that I associate with many of our health problems, including heart disease and cancer.
