Green Tea is receiving lots of attention for its health benefits as a powerful antioxidant as well as its metabolism enhancing properties. But summer weather demands a cold treat, and a fresh and relatively healthy one to consider is Green Tea Ice Cream. This is one home-made treat that doesn't require an ice-cream maker. And the subtle and slightly bitter taste of green tea nicely offsets the sweetness and richness of ice cream.

INGREDIENTS:
- 3 tbs green tea leaves (whole)
- 1 cup heavy cream
- 2 cups cold milk
- 2 egg yolks
- 1 tbs cornstarch
- 1 cup sugar
- In a saucepan, heat milk slowly to a boil.
- Add green tea leaves and cover. Let simmer for about 15 minutes.
- Beat egg yolks with sugar and cornstarch. Remove milk from heat and strain out the tea leaves.
- Whisk in egg mixture to keep the eggs from overcooking in the hot milk. When mixture thickens, remove and allow to cool. Then stir in the heavy cream.
- Freeze mixture for at least 2 hours before serving.
Another green tea ice cream recipe is to mix vanilla ice cream and maccha powder. You can also pour maccha sauce over vanilla ice cream.
