Cooking Time: 10 minutes

Prep Time: 1 hr 15 min

Total Time: 1 hr 25 min

Yield: 6 servings

Ingredients

4 tomatoes

3/4 lb (340g) medium shrimp, cooked, shelled and deveined

1/2 lb (230g) feta cheese*, crumbled

6 scallions, chopped

4 tsp (8g) fresh oregano, minced

Salt and freshly ground black pepper to taste (sea salt if on a corn-free diet*)

1 lb (455g) spinach linguine

Directions

Cut tomatoes in half crosswise. Squeeze to extract seeds. Coarsely chop tomatoes. Combine tomatoes, shrimp, feta cheese, scallions, oregano, salt, and pepper in a large bowl. Toss well and let marinate in refrigerator for 1 hour.

Cook linguine according to package directions. Rinse and drain well. Toss warm pasta with shrimp and feta cheese mixture and serve immediately.

* Allergy notes: People following a corn-free diet should avoid iodized salt since it contains dextrose, which should be avoided by those allergic to corn. The egg protein lysozyme is an unlabeled additive in some cheeses. People allergic to eggs should eliminate any cheese in this recipe.
