Tofu can be transformed into a spread that tastes almost like egg salad. Some say it tastes even better!
Preparation facts
Yield: 4 servings
Ingredients
4 oz (100g) tofu, drained
2 Tbs (30g) dill pickle, chopped
1 tsp (5g) onion, finely minced
1 tsp (5g) prepared mustard
1 Tbs (15g) celery, finely minced
1 Tbs (15g) low-fat mayonnaise
1 Tbs (15g) red bell pepper, finely minced
1/4 tsp (1g) curry powder
1/4 tsp (1g) garlic powder
Black pepper to taste
Directions
In a small bowl, crumble tofu with a fork. Add remaining ingredients and mix well. Check for seasoning and add more spices if desired. Serve with crackers or spread on a bagel or toast.
Makes 4 servings.
